Lavquiche


In a glass or non-stick 9  pie plate, line with lavash.  Tip:  Cut lavash squares by taking a few inches on the long end.  Carefully drop on top of the pie plate and coax into corners.  Trim around the edges to leave a little lavash above the edge of pie plate. 

In lavash prepared pie plate, add in well-drained broccoli, onion, mushroom and pepper mixture.  Top with shredded Swiss cheese.  Distribute ingredients evenly.  Pour on the egg and cream mixture nearly to the edge.  Dust the top lightly with paprika. 

Garnish the top with sliced mushrooms in any attractive pattern.  Place on a cookie sheet and bake in a moderate 350 degree oven for about 40 minutes.  Check with a sharp knife for doneness.  Inserted, it should come up clean.  Top should be golden and puffy.  Let quiche sit for about 5 minutes before cutting.
