Lavquiche
Ingredients:
- 7 medium eggs
- 1/3 cup half and half or cream
- 1/3 lb. Swiss cheese
- 1 head of broccoli (crowns only)
- 10-16 medium fresh mushrooms
- Diced red, orange, yellow or green pepper
- 1 sheet of lavash (any flavor)
- 2 tbl. olive oil, 2 tbl. butter
- Paprika and dash of cayenne pepper
Sauté chopped onions in oil and butter. Halfway through, add half of the sliced mushrooms and finely chopped peppers. Salt and pepper to taste. While sautéing, whisk the 7 eggs and blend with the half and half (or cream). Add 1 tsp. salt and a dash or two of cayenne to taste. Partially steam small bite size pieces of broccoli. When nearly done, blanch (plunge in cool water to arrest cooking and maintain bright color). Preheat oven to 350 degrees.
